Sous Chef, Multi Awarded Hotel, Salary at £28,000 p.a. Overtime pay, Burton Bradstock Chefshare is recruiting for a passionate and experienced Sous Chef to join the team in our clients multi award winning hotel and restaurant. This small hotel has 9 Rooms for guest to stay, a large restaurant which can cater for up 60 covers where the A La Cart menu is served and a small bistro for lighter meals as well as the outside terrace with a further 60 covers. The hotel is extensively used for wedding parties, which boosts trade in the offseason. Furthermore, the business was successful in being awarded in the Michelin guide as well as other local awards. You will be expected to be a hands-on chef helping in all areas of the kitchen, from assisting with the preparation of foods to keeping daily record checks in line with governing health and safety bodies, furthermore you will be expected to assist the head chef in stock control, ordering along with creating new and exciting dishes. The ideal candidate will have previous experience in a similar capacity as well as cooking with fresh, seasonal ingredients and be capable and confident managing the kitchen whilst the head chef is absent, along with this you will have the ability and skills to supervise staff getting the best out of your team whilst maintaining the high standard of fayre served. What we’re looking for: Have their own means of transport due to the location of the business. Someone with a background of dealing with high volume and preparing fresh ingredients. Proven successful track record of working within professional kitchens. Good communication skills. Someone with the passion and drive to excel in their new role. Your role as Sous chef Running of the kitchen on a day-to-day basis in the absence of the Head Chef. Lead and inspire the brigade to ensure the kitchen runs smoothly at all times. Ensure consistency of produce throughout the kitchen. Supervise service ensuring presentation of food is compliant with restaurant standards. Assist the Head Chef in menu compilation and possess an in-depth knowledge of the full menu. Support the management team to ensure targets are met with labour and food costs. Compliance with food labelling and temperature controls. To provide training and development for department staff in kitchen procedures. To ensure all statutory regulations are adhered to and to ensure that all employees are trained to uphold the conditions of the food hygiene policies. Demonstrate excellent communication and influencing skills. Work effectively as part of a team whilst undertaking a leadership role. Continually strive to achieve personal goals and objectives. Be uncompromising in achieving company standards. Communicate relevant business information regularly, efficiently, and concisely to the team. Details Start date immediately Salary at £28,000 p.a.
