About Your Role

We are looking for a highly motivated & organised Sous Chef with experience within high end kitchens in hotels or restaurants to assist our Head Chef– ideally with direct experience of working within a 2 rosette minimum standard kitchen.

Reporting to the Head Chef the role will be responsible for all aspects of the day to day running of the kitchen at the club including food for the halfway house as well as food served in the clubhouse, actively assisting in the running of an effective cost centre, ordering of all food stuffs, staff rotas, menu planning and coordination of any functions.

The role will also act as a support within proactive training of kitchen staff.

Your Responsibilities As a Sous Chef Will Involve
  • Support the Head Chef in the Day to day running of kitchen and take full responsibility in his absence
  • The role will include maintaining the required standard of food offerings in all aspects of the kitchen on a day to day basis. Making sure this level of expectation is maintained at all times and that the rota enables this to happen.
  • The role will include office admin duties required to fulfil and successfully manage all area of food production at the club.
  • Staff rotas & holidays – Responsible for the weekly staff rota ensuring sufficient levels of staffing whilst still working within the company employment policy.
  • Control all holidays taken whilst still maintaining a sufficient staffing level.
  • Orders, Stock control and budgets – Responsible for the day to day ordering of all food items needed to operate an efficient kitchen whilst still maintaining an appropriate stock level.
  • Monthly stock take in conjunction with auditor to create profit statement.
  • Work within the required budgets in all areas.
  • Implement and maintain HACCP & H&S procedures and records - This will be a fundamental aspect of your role, to implement and document all HACCP and H&S records within all areas of the kitchen.
About You

You will have previous experience of working in kitchens of at least 2 AA rosette standard as either Sous Chef or Senior Chef de Partie with a proven track record for maintaining standards and achieving Sales and Profit targets.

You will be a highly motivated individual capable of working under your own direction and as part of a wider team.

The ideal candidate will possess strong inter-personal skills to enable them to maintain the JCB brand of excellence in all their dealing.
