The Green Cornwall A beautiful and tranquil exclusive use wedding venue, hosting weddings of various sizes, from elopement weddings for two all the way up to traditional weddings for up to 140 guests. Our guests stay on-site for two days and are catered throughout their stay including a meal on arrival, 2 breakfasts for residents and then canapes, the wedding breakfast and evening food for the whole party. Our calendar of weddings is created 12-18 months in advance enabling meal service planning, ordering and staffing to be planned out months in advance. Due to our increasing schedule of events we are looking to add to our team. We are looking for more than just a Head chef and Senior Sous Chef. We are a small, family-run operation and we pride ourselves on delivering exceptional products in a caring and relaxed working environment. This role is perfect for an enthusiastic and competent individual that is looking for the opportunity to make a significant contribution to the further development of an already successful business, whilst maintaining a sustainable work life balance in the future. Personality and reliability are as important here as the skills to cook and serve up to 140 meals at a time. Although many of the menus are already set in advance there is scope for personal style and creativity to continue developing new and exciting menus and food offerings for our customers. Responsibilities include:
  • Control the food preparation process and any other relative activities
  • Maintain a clean and organised kitchen environment at all times
  • Modifying and developing menus to accommodate dietary requirements of some of our guests.
  • Deliver existing and previous menus as agreed with wedding clients
  • Work with the team to develop new menus and offerings for the future
  • Plan orders of ingredients and equipment according to need at agreed budget levels
  • Be actively involved in the hiring, managing and training of kitchen staff
  • Actively supervise the standards of work within the kitchen team
  • Maintain records of payroll and attendance where necessary
  • Comply with food safety standards and keep exemplary records
  • Foster a climate of cooperation and respect between all team members and departments Requirements:
  • Proven experience as Head Chef and Senior Sous Chef
  • Exceptional proven ability of kitchen management
  • Experience working with high cover numbers in a busy kitchen
  • Ability in dividing responsibilities and monitoring progress of team members
  • Outstanding communication and leadership skills
  • Up to date with current health, safety and food standards legislation and best practice
  • Strong understanding of useful IT and software
  • A calm and organised personality, prepared to train and develop team members
